Abstract

The objective of the project is to develop a proposal for Technological management and good Information Technology practices within the framework of COBIT5, ITIL and ISO 27000, based on the technological management analyzed in the Panadería la Victoria, The methodology carried out consists of an investigation experimental with field work, analytical and descriptive, developed in phases of Analysis, Planning, Design and Execution, from the TECSIS Research Seedbed as a classroom project of the subject Technological Management and Good IT Practices, using instruments such as Benchmarking, the Methodological guide COBIT5, ITIL and the ISO27000 standard on computer security. The importance of the project lies in, The La Victoria bakery company has a software called Sapiens, which allows the management of the purchasing, payroll, sales and production processes. These modules are designed to record and organize information and obtain reports, but they do not allow me to plan activities, or analyze large volumes of information through visual tools which would be of great help to improve the production process and be able to make decisions of all the variables (temperature, humidity, formulation, equipment) that prevent me from being 100% efficient and meeting quality standards.
